Long John Silvers Chicken Planks (blommi)

1 lb chicken tenderloins
3/4 c flour
2 T cornstarch
1/4 t baking soda
1/4 t baking powder
1 t salt
1 t sugar
1/4 t onion powder
1/4 t garlic powder
3/4 c water

Combine dry ingredients in a bowl and mix well. Add water and stir until well combined. Heat oil to between 360 and 375 F. Dip fish or chicken in batter to coat completely. Deep fry until golden brown (about 3 min per side).
