Outback Steakhouse Mashed Sweet Potatoes (food)

Sweet Potatoes

4 medium sweet potatoes
2/3 c dark brown sugar
6 T butter
1/2 t salt
1/2 t ground cinnamon
1/4 t ground nutmeg
1/4 t allspice

Bake sweet potatoes on a baking sheet for 60 – 70 min in a preheated 400 F oven until soft. When cool enough to handle, slice each one in half and scoop out “the good stuff.”. Mash the potatoes using an electric mixer until smooth. Mix in brown sugar, butter, salt, cinnamon, nutmeg and allspice. When you are ready to serve, reheat the potatoes in a saucepan or in a microwave until hot. Spoon 3/4 c- 1 c serving onto a plate and sprinkle with 2 T topping. Makes 4 servings

Topping

1 T butter
6 T pecans, chopped
1⁄4 c rolled oats (not instant)
2 T corn flakes, crumbled
2 T dark brown sugar
1⁄2 t ground cinnamon

Melt the butter. Add pecans, oats and corn flakes and stir over heat for 5 min or until the mix is hot. Don’t let this mix get brown! Pour mix into a medium bowl. Combine brown sugar and cinnamon in a small bowl and then stir the sugar into the nuts and cereal. .
