Cinnamon Roll Muffins with Streusel Crunch


2 c flour or maida
2 t baking powder
1/4 t salt
1/4 c sugar
1 egg
1 c milk
1 T cream
1/4 c butter, melted
1 t vanilla

Preheat oven to 400 F. Grease or line muffin tins. In a bowl mix together flour, baking powder, salt and sugar. In another bowl whisk egg and add milk, cream, butter and vanilla. Whisk together till everything is combined. Add wet ingredients to the dry ingredients and mix till just combined. It’s okay to see a few streaks of flour but don’t over mix. Gently fold in half the filling mix. Fill each muffin cup to about 3/4 full with batter. Top each muffin with a t or so of the Streusel mix after flour was added. Bake for 15 – 20 min til a toothpick inserted in the center of a muffin comes out clean. Remove muffins and place them on a wire rack to cool slightly. Makes 10 muffins.

Filling and Crunchy Streusel Top

1 c brown sugar
3 t cinnamon
1/4 c butter, at room temp
3/4 c chopped walnuts (can sub pecans)
2 T flour or maida

Mix together brown sugar, cinnamon powder, butter and chopped walnuts for the filling. After 1/2 the batter was mixed into the Muffin mix, add flour to the remaining filling and mix till it resembles a crumb like mix.
