Cinnamon Roll Muffins (somethewiserdanoah)


2 c flour
3 t baking powder
1/2 t salt
1/4 c sugar
3 T melted butter, cooled slightly
1 egg
1 c milk & more as needed

Preheat oven to 400 F. Generously grease a standard 12 cup muffin tin. In a large bowl, sift together the dry ingredients. In a separate bowl, whisk together the wet ingredients until well combined. Make a well in the center of the flour mix and add the egg mix, stirring only until just combined. Gently fold half of the Topping and Filling mix into the muffin batter. Spoon the muffin batter, about 1/4 c, into each muffin tin. Top with remaining brown sugar mix. Bake for 12 – 15 min or until muffins spring back when pressed lightly. Remove from oven. Cool slightly, then transfer carefully to a wire rack. Drizzle Frosting over the top of the muffins and enjoy every single delicious bite. Makes 12 muffins.

Topping and Filling

1 c brown sugar, loosely packed
3 t ground cinnamon
1 1/2 c coarsely chopped pecans or walnuts
3 T melted butter

Combine all the topping/filling ingredients.


2 oz cream cheese, softened
1 c powdered sugar
1 T milk
dash of vanilla

Whisk together all of the frosting ingredients.
