Chewy Gingersnaps (thatskinnychickcanbake)

3/4 c butter, at room temp
1 c brown sugar
1/4 c molasses
1 egg
2 1/4 c flour
2 t baking soda
1/2 t salt
1 t ginger
1 t cinnamon
1/2 t cloves
granulated sugar

Cream together butter and brown sugar. Mix in molasses and egg till well combined. Stir in flour, baking soda, salt, ginger, cinnamon and cloves. Cover bowl with plastic wrap and chill for at least an hour or overnight. Preheat the oven to 375º F. Scoop out dough with a medium-sized cookie disher (about 1 1/2 T dough). Roll dough balls in sugar and place on parchment lined baking sheet. Bake for 12 min. Makes 3 dozen.
