Cinnamon Streusel Apple Coffee Cake (throughherlookingglass)

Coffee Cake

3/4 c unsalted butter at room temp
2 c sugar
2 eggs, beaten
2 c flour
1 T baking powder
1/4 t salt
1 1/4 c sour cream
1 T vanilla
3 c peeled diced apples

Preheat oven to 350° F. Lightly grease and flour 10″ tube pan. Cream butter and sugar together in mixing bowl. Stir in eggs, blending well then add sour cream and vanilla. Separately in small bowl, stir together flour, baking powder and salt. Add flour mix to wet ingredients until just combined. Stir in apples. Place half batter in prepared pan. Sprinkle with cinnamon filling. Pour remaining batter on top. Sprinkle cinnamon streusel topping on top. Bake for 60 – 75 min or until cake tester comes out clean. (Your cake may need even longer depending on the moisture content of the apples.) Cool. Loosen all accessible edges with sharp knife. Carefully lift out of cake pan and place on cake platter.

Cinnamon Filling

1/2 c brown sugar
2 1/2 t ground cinnamon
1/2 t unsweetened cocoa powder

Combine ingredients. Set aside.

Streusel Topping

3/4 c sugar
1/4 t salt
3/4 c flour
1 1/2 t ground cinnamon
3 T butter, melted
1/2 c chopped pecans (opt)

In dry ingredients. Stir in melted butter. Set aside.
