Blackberry Crumb Bars (chocolatewithgrace)

Crust and Topping

3 c flour
3/4 c cold butter, cut into pieces
3/4 c sugar
1/2 t salt
3 large eggs, beaten

Preheat oven to 375 F. Grease a 9 x 13″ baking pan. Stir together the flour, sugar and salt, cut in the butter with a pastry blender until the butter is in pea-sized pieces. Stir in the beaten eggs with a fork. Press half of the dough into the bottom of the baking dish. Sprinkle filling over crust in pan. Sprinkle with the other half of the dough mix. Bake for 30 – 35 min or until lightly browned. Let cool completely. Makes 24 bars.

Filling

4 c blackberries, halved
1 T fresh lemon juice
1 T cornstarch
3/4 c sugar

Cut the blackberries in half, toss them with the lemon juice, cornstarch and sugar.
