One Minute Blueberry Cobbler in a Mug (snappygourmet)

1/4 c flour
2 t sugar
1/4 t baking powder
pinch of salt
2 T milk
2 t unsalted butter, melted
1/2 c fresh blueberries

In a small bowl, mix together flour, sugar, baking powder and salt until well combined. Mix in milk and melted butter until just combined. Place blueberries in bottom of a large (6 or 8 oz) microwave safe mug or ramekin. Press blueberries down slightly with the back of a fork to break up. Spoon batter on top of blueberries. Place cobbler on top of small microwave safe plate in case blueberries boil over. Microwave on high for 30 seconds, check on cobbler, then microwave another 30 seconds. Adjust baking time as needed for your microwave. Top with your favorite topping if desired. Note: Do not overfill your ramekin or it will boil over a lot. For a little more flavor add a little vanilla extract, almond extract or other flavoring to the topping or fruit.
