1 lb rhubarb, cut into 1/4″ pieces (3 – 4 c)
1 3 oz pkg strawberry jell-o
1 pkg yellow cake mix
1 c water
1/4 c butter, melted
Preheat oven to 350 F. Grease a 9 x 13″ baking dish. Spread rhubarb evenly in the bottom of the baking dish. Sprinkle the sugar over the rhubarb, followed by the powdered jell-o mix, and finally the dry cake mix. Pour water and melted butter over the top. Do not stir. Bake for 45 min or until the rhubarb is tender.
