Cornbread in the Bread Machine (breadmachinediva)

1 c cornmeal
1 – 1/4 c bread flour
4 t baking powder
1/4 c sugar
1 t salt
1 t vanilla
2 eggs, lightly beaten
1 c milk
1/4 c melted butter or oil

Follow the instructions that came with your bread machine in terms of which ingredients to put in the machine first. Then select the cake setting with a light crust. If your machine doesn’t have a cake setting, use the quick bread setting. To Freeze: Slice cornbread  and pop it in the toaster to use. It thaws and heats the cornbread all at once.
Note: Can be made in a 2 lb machine, however it also works in a 1 1/2 lb machine.

Ezekial Bread (Bread Machine) (breadmachinerecipe)

1 1/2 lb. Loaf  

1 c water
1/4 c red kidney Beans, cooked and drained
1/4 c lentils, cooked and drained
1 1/2 T olive oil
1 1/2 T honey
1/2 t salt
2 c bread flour
1/2 c barley flour
1/2 c millet flour
2 T vital gluten
1 1/2 t yeast

2 lb Loaf  

1 1/4 c water
1/3 c red kidney beans, cooked and drained
1/3 c lentils,cooked and drained
2 T olive oil
2 T honey
1 t salt
2 2/3 c bread flour
3/4 c barley flour
1/3 c millet flour
2 1/2 T vital gluten
2 t yeast

Before starting this recipe you will need to cook and drain the beans and lentils. Alternatively you could buy canned beans, which do not need cooking. Once your bread machine is set up and ready to go you can begin adding the ingredients. Add the ingredients in the listed order, and when they are all in your can close the lid of your bread maker. Now you should select which crust setting you want, and for this is should be “basic” or “light” (some machines have different names for this). Click the “knead” button and leave for 10 min. This is the time to check the mixture’s consistency. Lift the lid, and using a clean finger test the dough’s consistency. It should not be too wet or too dry. If it is then it is easy enough to correct. Simply add a t water if it is too dry or a t flour if it is too wet. Then press the knead button again and allow it to knead for 1 min longer. Once the dough is prepared you can set the bread machine to ‘basic bread machine’ setting. Wait for the machine to beep and then you can remove your Ezekiel loaf. Allow it to cool on an open wire rack. Note: Ezekiel bread is a wonderful recipe to play with. There are many alterations that can be made regarding the combination of beans and flour. Try adding pinto or northern beans or change one of the flours for spelt flour. Another option is to add some nuts or raisins. One problem with Ezekiel bread is that it has a high quantity of beans/legumes in proportion to flour. This unfortunately will make the bread very crumbly and may not hold together well. If you find this happens with your loaf consider reducing the amount of beans in the recipe. This will give the loaf a better structure and make it easier to eat.

Dark Rye (Bread Machine) (geniuskitchen)

2 1⁄4 t yeast
1 1⁄4 c warm water
1⁄3 c molasses
2 1⁄2 c bread flour
1 c rye flour
1⁄2 t salt
1⁄8 c vegetable oil
1⁄8 c cocoa powder
1 T caraway seed (opt)

Add ingredients to your bread machine as directed. Set to standard (white) bread and Go.

Outback Steakhouse Bushman Bread (Bread Machine) (momcaster)

1/2 c each: water, brewed coffee, evaporated milk warmed to 100 F
2 T butter, softened
1/2 c honey
2 1/4 c bread flour
2 1/4 c wheat flour
1 T cocoa
1 T sugar
1 T molasses
1 t salt
2 1/4 t bread machine yeast

Put all the wet ingredients together in a big glass measuring cup. Put all dry ingredients EXCEPT FOR the bread machine yeast. You don’t add that just yet. Place all of the ingredients in the bread machine – wet ingredients first, then add the dry ingredients and finally put the bread machine yeast on top. Use your bread machine’s setting for “sweet bread.”

Easy Banana Nut Bread Recipe in the Bread Maker (emilyaroach)

1/4 c yogurt
1/4 c milk
1/3 c room temp butter, cut into 1/2” pieces
1/3 c applesauce
2 eggs at room temp
1 1/2 t vanilla
1 1/2 c mashed bananas. (typically 3 bananas)
2 2/3 c white whole wheat flour
1 t salt
3/4 c sugar
1/4 c brown sugar
1 t baking powder
1 1/2 t baking soda
3/4 c chopped walnuts

Add ingredients to the bread machine in the order listed. Add walnuts to fruit/nut dispenser (on Breville model, or add to bread pan directly.) Place pan in bread machine and set to Quick loaf, or appropriate setting for non-yeast bread. Press start. Scrape sides (if you remember, otherwise don’t worry) after first few min of the mixing cycle. Remove bread pan when timer finishes. Let cool for 5 min, then remove bread carefully and let cool for another 15 min. This cuts down on the crumble factor, but it will be really hard to wait! Note: You could replace the yogurt and milk with 1/4 c buttermilk.

Lemon Cake Bread Machine (3boysandadog)

Lemon Cake

1  18 oz pkg yellow, golden or lemon pudding cake mix
1 c water
3 eggs, lightly beaten
1⁄3 c vegetable oil
1 T freshly squeezed lemon juice
2 t grated lemon zest

Measure cake ingredients into baking pan in the order recommended by the manufacturer. Insert pan into the oven chamber. Select Cake Cycle. Halfway through mixing time, using a rubber spatula, scrape down sides of baking pan and kneading blade. When signal sounds indicating the end of cycle, test for doneness with a wooden skewer. If ready, remove baking pan from bread machine. If not, keep in bread machine on Keep Warm Cycle for 10 – 30 min or on Bake Cycle until baked. With a long wooden skewer, poke several holes through the cake as soon as it is removed from the bread machine. Spoon warm syrup over the hot cake. Set baking pan on a cooling rack for 30 min. Turn cake out onto a serving plate and set aside to cool completely.

Lemon Syrup

1⁄2 c sugar
3 T freshly squeezed lemon juice

 

In a small saucepan over low heat, combine sugar and lemon juice. Heat, stirring constantly, until sugar is dissolved.

Extremely Soft White Bread (Bread Machine) (geniuskitchen)

1 c hot water
2 t yeast
3 T sugar
1⁄4 c vegetable oil
1 t salt
3 c white flour

Put your hot water, yeast and sugar in your bread machine. Let stand 6 – 12 min depending on the temp of your water. Your yeast will foam. Add remaining ingredients. Use rapid or basic white cycles or bake for 25 min at 350 F.

Mock Sourdough Bread (Bread Machine) (theprofreshionalduo)

2/3 c water
2 T white vinegar
1/2 c sour cream
1 T sugar
1 1/2 t salt
3 c bread flour
2 1/4 t active dry yeast

In bread machine pan, place all ingredients in order suggested by manufacturer. (usually liquids first, then dry ingredients, ending with yeast last). Select basic bread setting on machine. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 min of mixing, and add 1 – 2 T of either flour or water if needed.) Note: If your bread machine has a time-delay feature, it’s recommended that you don’t use it because the sour cream may spoil if it sits too long unrefrigerated in the machine. Yield: 1 loaf (1 1/2 lbs).

1 1/3 c warm water
2 T & 2 t sugar

1/3 c olive oil (it’s not nearly as good with vegetable oil)

1 egg
1 c buttermilk
1/4 c water
3 T butter
1 1/2 t salt
3 T sugar
2 t yeast
4 c flour

Put the yeast in the bread machine first. Then add the liquids. Next, add the solid ingredients with the flour last. Push button and wait for a wonderful thing to happen. Dough forms. After the first rise, remove the dough and form a loaf. Put it into a buttered pan and let rise again until double and bake at 375° F for 25 min.

Garlic Cheddar Herb bread for the Bread Machine (breadmachinerecipe)

2 lb Loaf

4 c bread flour
2 2/3 t active dry yeast
1 1/3 c warm water
1 1/3 T butter
1 1/3 T powdered milk
1 1/3 T sugar
2 t salt
2 2/3 t garlic powder or 3 t minced garlic

1 1/2 lb Loaf 

3 c bread flour
2 t active dry yeast
1 c warm water
1 T butter
1 T powdered milk
1 T sugar
1 1/2 t salt
2 t garlic powder or 3 t minced garlic

Add ingredients in the order suggested for your particular machine and then select the ‘knead’ or ‘mix’ function. After 10 min you can open the lid and test the consistency of the dough and add flour if it is too wet or water if it is too dry. Once the dough is ready you can then select the ‘basic bread’ function and press Start. You should use a wire rack to cool the bread once it has finished in the machine. Note: This is a very versatile bread recipe so think about using olive oil instead of butter to give the bread Mediterranean taste. Add some parsley for an extra flavor.

Garlic Herb Pepperoni Bread (Bread Machine) (food)

1 c water, warm or room temp
1/4 c light olive oil
3 c bread flour
1 T sugar
1 t salt
1/2 – 1 t garlic powder
1/2 – 1 T minced dried onion
1 t dried basil
1/4 c shredded mozzarella cheese
1/3 c grated parmesan cheese
1/4 c pepperoni slice, chopped
2 t bread machine yeast

Place ingredients in the bread machine pan in the order listed or as recommended by your machine’s manufacturer. You can adjust the garlic and onion to your preference. Don’t let the salt touch the yeast. At this point you can either select White Bread and press Start to complete in the bread machine, or use the dough setting and finish in the oven. (The oven method seems to result in a higher loaf with better texture.)

Oven Method: Select dough cycle and press start. When complete, turn the dough out onto a floured surface and punch down. Flatten out into a rectangle, patting to get out bubbles. Roll tightly into a log, turn seam side down, and tuck the ends under. Place into a loaf pan that has been lightly greased with olive oil, loosely cover with plastic wrap sprayed with nonstick spray and let rise in a warm place for 45 min or until doubled. Bake in a preheated 350 F oven for 30 min or until done (if the bottom of the loaf sounds hollow when tapped, it’s done). Immediately remove from loaf pan and cool on a wire rack at least 10 – 15 min before slicing. Makes a 1 1/2 lbs loaf.

Bread Machine Pound Cake (breadmachinediva)

3 large eggs, beaten
1/3 c milk
2 c flour
3 t baking powder
1/2 c butter, melted
1 c sugar
1 t vanilla

Follow the instructions that came with your bread machine in terms of which ingredients to put in the machine first. Then select the cake setting.  I used the medium crust setting, but next time I’ll try the light setting. For those with machines featuring a “quick bread” cycle I think this recipe will work with that cycle too.  The cake freezes very well. Makes a 2 lb loaf.

 

Cheddar Cheese Bread in the Bread Machine (keyingredient)

3/4 c water, room temp
1 large egg
1 t salt
3 c bread flour
1 c sharp cheddar cheese, shredded
2 T non fat dry milk
2 T sugar
1 t bread machine yeast

Add all ingredients to bread machine pan according to manufacturers instructions. Adding cheese with flour. Note: Do not use delay bake feature because of the egg.

Brioche in the Bread Machine (kitchenencounters)

1 lb Loaf

1/2  c whole milk
3 T salted butter, cut into pieces, preferably at room temp
2 T & 1 1/2 t sugar
3/4 t sea salt
1 extra large egg, preferably at room temp, lightly beaten
2 c & 2 T flour
1 t granulated dry yeast NOT rapid-rise

2 lb Loaf

1 c whole milk
6 T salted butter, cut into pieces, preferably at room temp
5 T sugar
1 1/2 t sea salt
2 extra large eggs, preferably at room temp, lightly beaten
4 1/4 c flour
2 t granulated dry yeast NOT rapid-rise

In a 1 c measuring container, heat milk until steaming. This is quickly and easily done in the microwave oven. Add sugar, salt and butter to the milk. Set aside until the butter has melted or is almost melted. If the milk is steaming and the butter is at room temp, this will only take about 2 min. Using a fork, briefly whisk these wet ingredients together, so they are uniform in color and add them to the bread pan. In the same measuring container and using the same fork, lightly beat the eggs. Add beaten eggs to the wet ingredients already in bread pan. Always remember: when you are making bread in a bread machine: always add the wet ingredients first! Add flour into the bread pan on top of the wet ingredients. Do not mix or stir! Using your index finger, make a small indentation on top of the dry ingredients (but not so deep that it reaches the wet layer). Add the yeast to the indentation. Note: It is important to keep the dry yeast away from the wet ingredients until it is time for machine to knead them together, because the liquid ingredients will prematurely activate the yeast. Insert bread pan into bread machine and press down until it is “clicked” securely into place.  Close the lid and plug the machine in.  Press “select” choose “white bread”.  Press the “loaf size” button to select the loaf size you are making. Press the “crust control” button and select “light crust”.  Press “start”.  Depending on the make and model of your bread machine, and the size of loaf you are making, the entire baking process will take about 2 1/2 – 3 hours. Walk away. Do not lift the lid to check in on the process. The moment the bread is done: Carefully open the lid of the bread machine.  Using pot holders or oven mitts, remove the bread pan from the machine, using its handle to lift it from the machine. Turn the bread pan at about a 30 – 45 degree angle and gently shake/slide the loaf out onto its side. Turn the loaf upright and place it on a cooling rack to cool completely. If the kneading paddle remains in the loaf after it is removed from the pan, cool the loaf completely before removing it.

Soft Oatmeal Bread in the Bread Machine (tasteofhome)

1 1/2 c warm water
1/4 c canola oil
1 t lemon juice
1/4 c sugar
2 t salt
3 c flour
1 1/2 c quick cooking oats
2 1/2 t active dry yeast

In bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 min of mixing; add 1 -o 2 t water or flour if needed). Freeze Option: Securely wrap and freeze cooled loaf in foil and place in resealable plastic freezer bag. To use, thaw at room temp. Yield: 1 2 lb loaf.

Bread Machine Potato Rolls (lovelylittlesnippets)

1 c milk
1 large egg, slightly beaten
1 T sugar
1 t salt
2 T butter, melted
1/2 c instant potatoes flakes
3 c unbleached white bread flour
2 3/4 t active dry yeast

Place all of the ingredients in the the bread machine pan in the order recommended by the manufacturer. Set on Dough cycle, press Start. When cycle is complete, remove dough from the machine, deflate and turn out onto a lightly floured surface. Let rest for 10 min. Divide the dough into 12 equal pieces and form into rounds. Place the rounds on lightly greased baking sheets, decoratively slash top of each with a sharp razor or knife, if desired. Cover the rolls with a damp cloth and let rise in a warm area until doubled in volume, about 30 – 40 min. Preheat oven to 375° F. Bake for 15 – 18 min or until the rolls are golden brown. Makes 12 rolls.

1 c rye flour
2 3⁄4 c bread flour
1⁄3 c brown sugar
2 t caraway seeds
1 1⁄2 t Kosher salt
2 T butter
1 1⁄2 c warm water
1 1⁄2 t dry yeast

Bring all ingredients to room temp and add to bread machine baking pan, in order suggested by manufacturer. Select basic setting , medium size, light crust and push Start.

Bread Machine White Bread (Alexa G.)

1 1/4 c warm water
3 T sugar
1 1/2 t salt
3 T vegetable oil
3 c flour
2 1/4 t yeast

Use basic setting. Optionally this will make a standard loaf when you let it rise in a bread pan or 2 smaller loaves when dough is divided and placed on a cookie sheet to rise. Bake at 350 until golden brown and sounds hollow when you tap it.
