Cheesecake Facory Mile High Meatloaf Sandwich (cheesecakefactoryathome)

1 lb lean ground beef
1/2 lb ground pork
1/2 lb ground veal
3/4 c large-curd cottage cheese
1/2 c shredded Cheddar
1 c chopped onions
1/2 c chopped green pepper
1/2 c dry, unseasoned bread crumbs
2 eggs
1/3 c tomato sauce
1/4 c dry red wine
1 T Dijon
1 T salt or to taste
1/4 t pepper

Preheat oven to 350 degrees . Combine all in a bowl and mix well. Pack into a 9 x 5″ loaf pan. Bake at 350 F for 50 min.

Caramelized Onions

Slice onions into 1/4″ wide rings. Heat butter or combination of butter and oil in heavy skillet. Add onions and a small amount of sugar and slowly cook over medium heat. Cook until onions are caramel colored, stirring often, 30 – 40 min. When serving with meat loaf add a splash of red wine at the end of cooking, stirring to deglaze the pan.

Mushroom Sauce

1 T grated onion
2 T butter
2 T flour
1 can or jar mushrooms
1 1/2 c beef broth
1/2 c water
1/4 c red wine
1/2 t Worcestershire sauce
freshly ground pepper to taste
1/2 t finely snipped parsley (opt)

Melt butter in skillet, blend in flour. Cook and stir over medium heat until flour begins to brown. Add mushrooms cook for 1 minute stirring constantly. Stir in beef broth and water. Bring to boil. Add onion, wine and Worcestershire sauce and cook at a medium simmer for approx 5 min. Reduce heat to low and simmer until reduced to desired volume. Add freshly ground pepper and snipped parsley. Makes about 1 1/3 cups.

Mashed Potatoes

4 c red potatoes
2 T horseradish (heaping)
1/2 c butter, softened
1 t salt and to taste
1 c gouda cheese, shredded

Cut away blemishes in potato skins, and cube potatoes with skins on. Boil potatoes until very soft and drain off water. Add butter and salt and whip with a rotary beater until butter melts. Whip in remaining ingredients. Adjust seasoning. Makes 4 – 6 servings.

Other Ingredients

1 slice really good toasted bread

Assembly: Place bread on plate, 1/2 – 3/4″ slice of meatloaf on top of bread, 2 – 3 ice cream scoops of mashed potatoes on meatloaf, generous helping of caramelized onions and gravy over all.

Red Robin Bacon Cheeseburger (cdkitchen)

1 5.5 oz size ground beef patty
3 slices Hickory-smoked bacon, cooked
1/4 t Red Robin Seasoning or seasoned salt
2 slices cheddar cheese
1 sesame seed hamburger bun
1/3 c shredded iceberg lettuce
2 t mayonnaise

Preheat barbecue. Shape ground beef into round patty slightly larger than the sesame seed bun. Sprinkle with Red Robin seasoning blend on both sides of the patty. Grill for 3 – 5 min per side. About 1 min before the burger is done place slices of your favorite cheese on top of the patties and allow cheese to melt. Toast top and bottom of sesame seed bun. Spread mayo on toasted bottom bun. Add grilled burger with the slices of melted cheese onto bottom bun. Add tomato slices to burger. Lay cooked hickory bacon on top of tomatoes. Place 2 pieces of bacon to form an X and 3rd piece across center of X. Top with shredded lettuce. Finish by placing top bun on lettuce.
