Air Fryer General Tso’s Chicken (technicalaia)

8 boneless, skinless chicken thighs, cut into bite-sized pieces
2 t & 3 T reduced sodium soy sauce (or tamari if gluten free), divided
3 T cornstarch
2 t vegetable oil or other neutral flavored oil
1 t ginger
1 t garlic
1/4 t red pepper flakes
1 T Hoisin sauce (you can use gluten-free Hoisin sauce)
1 T rice vinegar
1 t toasted sesame oil
1 T cornstarch & 1 T water (slurry)
3/4 c reduced sodium chicken stock
2 t brown sugar
2 sliced scallions

Preheat air fryer to 400° F. Let chicken marinade for a few min by mixing it with 2 t soy sauce. After that, add chicken pieces in a large plastic bag with a zip top to fully cover them in 3 T cornstarch. After lightly sprinkling or brushing the air fryer rack with oil, place chicken pieces in a single layer. Avoid packing pan too full; you might need to cook in batches. Cook for 8 – 10 min or until chicken is thoroughly cooked shaking basket periodically. Transfer to a platter. In a medium saucepan. Heat vegetable oil over medium heat. Stir in garlic, ginger and red pepper flakes. Simmer for 30 seconds to release aroma. Add soy sauce, Hoisin sauce, chicken stock, vinegar, brown sugar and sesame oil, and simmer 2 – 3 min. Add cornstarch slurry to pan. Simmer until thickened, about 1 – 2 more min. Remove from heat. Combine chicken with sauce. Add sesame seeds and scallions as garnish.
